I was wanting some ice cream but knew I needed to stick to my meal plan for my current workout program, so I whipped up this healthy, meal plan approved sorbet. If you follow the 21 Day Fix meal containers, the portions are listed below so you can know exactly how this fits into your meal plan too.


Meal container values: 1 Purple & 1 Red container

Ingredients:

6-8 oz water

1 cup ice

1 cup frozen fruit (I used raspberries and measured it out in my purple meal container)

1 scoop Vegan Vanilla Superfoods (Message me for info.)


Directions:

1. Place all ingredients in a high powered blender (I have a Ninja) or a food processor if your blender isn't high powered and blend until desired consistency. Add additional water or ice cubes if necessary.


Side Note: You can recreate this with any frozen fruit or a mixture of different frozen fruits. ex) mango, peach, strawberry pineapple, mixed berry, etc

Alright guys, this is something that I think you will love! It is seriously the most delicious little treat I have possibly ever made and will probably, for the rest of my years, not be able to go without having a tupperwear of in my fridge. Its made of minimal ingredients and takes approximately 5 minutes with clean-up time to throw together. Without further ado. . .

Ingredients:

1 scoop Vegan Vanilla Superfoods (message me for info.)

4 tbsp Peanut Butter

3 tbsp Coconut Oil

1 tbsp Maple Syrup

1 tsp Vanilla Extract

Chopped nuts or granola for topping

Directions:

1. Heat Coconut Oil, Peanut Butter, Maple Syrup, and Vanilla Extract in a small saucepan, just enough to melt everything together (Do Not Boil).

2. Line a small square baking dish with parchment paper (so it doesn't stick to the dish)

3. Stir in Superfoods powder. Pour into baking dish and sprinkle with chopped nuts or granola.

4. Place in freezer until firm. Cut into squares or break into smaller pieces and place in a tupperwear container. Store in the refrigerator.


Note: you can also make this with different flavors of Superfoods (or protein powder) Think of your favorite flavor of fudge and then try to recreate it. Have fun and go crazy with it!!

I have created for you guys a healthy banana bread recipe that is refined sugar-free and dairy-free. Because this bread is made without brown sugar or granulated sugar, it is not as sweet as your typical banana bread, but I promise is still delicious.

Ingredients:

3 spotty bananas; mashed

2 eggs

1/3 cup coconut oil; melted

1/2 cup honey or maple syrup

1/4 cup milk of choice (I used unsweetened almond milk)

1 tsp baking soda

1 tsp vanilla extract

1/2 tsp salt

1 tsp cinnamon

1 3/4 cup flour (you can use gluten free flour here to make this a gluten-free recipe as well)

1/2 cup optional add in's such as blueberries, walnuts, pecans, chocolate chips, etc.

Optional topping: granola (mine is homemade, the recipe is already here on the blog)


Directions:

1. Preheat oven to 325°F

2. In a large bowl mash the bananas and then beat in the eggs, maple syrup or honey, coconut oil, milk, and vanilla.

3. Slowly stir in flour, baking soda, salt, and cinnamon. If you choose to add an optional add-in, now is the time to fold it in.

4. Pour the batter into a greased a 9x5 inch loaf pan and sprinkle granola on top if you choose to do so.

5. Bake for 60 minutes, or until a toothpick comes out clean. Let cool and enjoy.
